Healthy Recipes: Tortellini Soup
Non-stick cooking spray
2 cups reduced-fat or lean Italian turkey sausage
½ cup finely diced onion
¼ cup red wine
½ Tbsp dried basil
½ Tbsp dried oregano
1 15-ounce can no-salt added diced tomatoes with juice
3 14.5 ounce cans fat-free, low sodium chicken broth
2 ½ cups uncooked whole-wheat cheese tortellini
½ tsp ground black pepper
- Coat a large soup pot with cooking spray. Add sausage and onion and cook over medium-high heat for 7 minutes or until sausage begins to brown.
- Add wine to deglaze pan. Cook for 2 minutes or until wine is almost evaporated.
- Add basil and oregano and cook for 1 more minute. Add tomatoes and broth. Bring to a boil then reduce heat and simmer for 5 minutes.
- Add tortellini and pepper. Cook for another 10 minutes.
